I was in a room with a group of individuals a few weeks back where we had to share a “fun fact” about ourselves...and I went completely blank 😐
I literally stood up and said “umm..yeah I’m a mom, uh..there’s nothing that interesting about me” and sat back down. It was a little funny, but also in that moment it didn’t even cross my mind that losing OVER 110LBS was a real “fun fact” about me! 👏🏼
I overlook it a lot of the time, or get shy when people mention it. Which I know might sound crazy because obviously I have a public page dedicated to it 🤷🏻‍♀️
I’m slowly learning to embrace my hard work, and that it is something I shouldn’t be afraid to share in person. I worked damn hard for this, it isn’t bragging, it’s being proud. It is hard as hell, in fact it was one of the hardest things physically and mentally I had to commit to, but it was everything I wanted, and yes it was 100% worth it ❤️

"As a child, I was never really a scholar. I didn’t like to study but did it because I had to get marks. I was much more interested in other activities like sports, swimming, karate etc. I wanted to become an actress or a sportsperson who would win medals, but I ended up working in the private banking sector. I wasn’t sure where my journey was taking me but I knew I needed to rip it and grip it. A year in and I’m grateful to have been promoted as Senior Instructor. I pinch my self every day. Vegan Peanut Butter & Chocolate Chip Protein Pancakes (Makes 2-3 servings)

Dry ingredients:
1/3 cup chickpea flour
1/3 cup oat flour 
1/3 cup @DrinkOrgain vegan chocolate peanut butter protein powder
2 tsp baking powder 
1/3 tsp sea salt 
Wet ingredients: 
1 cup oat milk 
1 tbsp apple cider vinegar

Other ingredients:
1/2 cup vegan chocolate chips 
Oil or vegan butter for cooking

Toppings:
2 tbsp smooth peanut butter
2 tbsp maple syrup
Extra chocolate chips (optional)

Directions: 
Mix the oat milk with the apple cider vinegar and set aside. 
Mix all dry ingredients and then slowly start mixing in the oat milk mix using a whisk or a fork (don’t over-mix). Let the batter sit for 5 minutes and then fold in the chocolate chips. 
Heat a little oil (olive or coconut) or vegan butter in a non stick pan and start cooking your pancakes (you’ll need about 1/3 cup of batter per pancake or less if you want mini pancakes). Cook them over medium heat for approximately 2 minutes on each side (careful not to burn them if your stove is very hot). Let them cool and mix the peanut butter with the maple syrup (you can also just use either of them separately). Serve the pancakes topped with the peanut maple mix and some extra chocolate chips. BAKED BUFFALO BROCCOLI WINGS
'Wings'
1 1/4 cup (190g) plain flour
2/3 cup (100g) chickpea flour
1 1/4-1 1/2 cups (310-375g) plant-based milk, such as almond, soy or coconut, depending on how thick you'd like your batter
1 tsp garlic powder
1 tsp smoked paprika
Pinch of any good-quality salt
3 cups (300g) broccoli florets
1/2 cup (125mL) hot sauce*
1/4 cup (100mL) maple syrup

Creamy Dipping Sauce
1/2 cup (65g) raw cashews
1/4 cup (65mL) plant-based milk, such as almond, soy or coconut
1 tbsp lemon juice or apple cider vinegar
Pinch of any good-quality salt
1 tbsp dried dill
1 tsp garlic powder
.
Instructions
1. Preheat the oven to 180°C (350°F). Line 2 trays with baking paper.
2. To make the broccoli wings: In a medium bowl, combine the first 6 ingredients.
3. Dip each frozen broccoli floret in the batter. Make sure all sides are covered but shake off the excess batter. Place the broccoli on the lined baking trays.
4. Bake the broccoli in the oven for 20 minutes, flipping them after 10 minutes.
5. Meanwhile, make the hot sauce coating by combining the hot sauce and maple syrup in a small bowl.
6. Drizzle the hot sauce over the broccoli ensuring all sides are coated. Alternatively, dip each floret in the sauce and return them to the baking tray. Bake the broccoli for another 15-20 minutes or until the batter is golden.
7. Meanwhile, make the creamy dipping sauce: Add all ingredients to a blender and blend until smooth.
8. Enjoy immediately!
