The face I make when I open Instagram and see everyone freaking out about potential pesticide residue on a high fiber cracker.

I completely understand the concern and fear when you hear that something you eat alot of is potentially dangerous. At that point, you can and should do your own research. You're entitled to ask questions and err on the side of caution, especially when it comes to your health.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Everyone has their own causes. Some worry about the use of plastic straws and what that might mean for turtles. Others worry about the student loan bubble. Some worry about the effect of artificial sweeteners on the gut. And these worries are appropriate... because they don't have established answers.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
The problem I see a ton of, especially on social media, is even in the existence of reputable research, people want to believe the worst.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
They want to believe that GMOs are harmful... or that eating soy increase breast cancer risk. Some people even choose not to vaccinate their children for fear that vaccines cause autism. Others fear that the use of glyphosate in agriculture causes cancer. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
But we can't do that... because if we choose to ignore all the evidence that these things are safe, it means that we can't trust anything.

We can't cling to our beliefs so strongly that even in the face of evidence, we don't want to see it. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Vegan Mocha Cake with Creamy Coffee Cream (GF)⁣

Who is up for a slice? This super fluffy mocha cake tasted heavenly with creamy coffee cashew cream!!! ⁣
⁣
◾️Ingredients for 16.5 cm/ 6 1/2 in round cake tin: ⁣
80g raw almond (ground) or almond meal ⁣
40g raw hazelnut (ground) or hazelnut meal⁣
60g brown rice flour (or rice flour)⁣
40g tapioca starch (or corn starch)⁣
70g coconut sugar ⁣
5 Tbsp. cocoa or cacao powder ⁣
2 tsp ground coffee⁣
1 tsp baking powder ⁣
1/2 tsp baking soda⁣
1/8 tsp pink salt⁣
100g ripe banana ⁣
3 Tbsp. olive oil (or vegetable oil)⁣
2 Tbsp. flax meal (or grind 1 Tbsp. flaxseeds with a coffee grinder)⁣
1/3cup (80ml) soy milk (or almond milk)⁣
1 tsp apple cider vinegar ⁣
⁣
Coffee cream:⁣
150g raw cashews (soak 4-6 hours and rinse well)⁣
4 Tbsp. melted coconut oil.⁣
1 tsp instant coffee (dissolve in 2 tsps warm water)⁣
4-5 Tbsp. maple syrup ⁣
1 Tbsp. plant milk ⁣
1/2 tsp vanilla bean paste ⁣
Pinch of pink salt⁣
⁣
◾️Method:⁣
1. Preheat oven to 200⁰C. Line a cake tin with parchment paper.⁣
2. Make vegan buttermilk. In a small cup, mix soy milk and apple cider vinegar. Set aside.⁣
3. In a large bowl, place flaxseed meal and 4 Tbsp. water. Mix well and set aside for a few minutes to thicken. ⁣
4. In the same bowl, add banana and mash with a fork. Mix well.⁣
5. Add ground coffee, cocoa powder, coconut sugar, and salt. Mix well.⁣
6. Add olive oil and mix well.⁣
7. Add vegan buttermilk and mix well.⁣
8. Add almond meal, hazelnut meal, rice flour, tapioca starch, baking powder, and baking soda. Mix until combined. ⁣
9. Pour the butter into the prepared tin and smooth down evenly.⁣
10. Bake it for 25-30 minutes or until a toothpick comes out clean. ⁣
11. While cooling the cake, place all the ingredients for the coffee cream in a high speed blender and blend well until smooth. If your cream is too thick, add your choice of plant milk to reach your desired consistency. Spread the cream over the cake.⁣

Recipe: Serves 2 
160-200g pasta (depending how hungry you are)
1 cup broccoli florets (about half a large head steamed over the boiling pasta in a sieve until slightly soft, rinsed in cold water straight away)
2/3 cup packed fresh basil 
1 clove of garlic 
1/3 cup fresh frozen garden peas
1tbs nutritional yeast 
juice of half a lemon 
2tbs of water to blend

Get the pasta on to boil and steam the broccoli over the boiling pasta until slightly soft then rinse in cold water. Place all ingredients into blender and blend, add in the water 1tbs at a time just to get it going. When the pasta is cooked drain and rinse, add the pesto and mix well, return to heat and warm through for a few minutes. Serve and enjoy! 🙏

One of my favorite things to have is bruschetta ! I tried this version, and my mind was blown! 🤩🤩

I just want to clarify that I will enjoy BOTH these options, depending on my mood! If I’m looking for VOLUME and a side dish/ snack I’ll be reaching for the option on the right! If I want a meal/ just feel like it, I’ll be reaching for the option on the left! BOTH can be incorporated into a healthy lifestyle! 💁‍♀️

🍅 On the right we have 3 slices of aubergine roasted in the oven with some olive oil ( I used olive oil spray) and some seasoning at 180 degrees Celsius until cooked through! I then top it off with 1 chopped tomato, 1 tsp olive oil, basil, oregano, garlic, salt & pepper!.
