Die Sorte "Pesto Rosso" (rosso dürfte auf italienisch einfach "rot" bedeuten) ist bei Rewe vegan, sogar mit V-Label. Ich mische Pesto ja gerne mit Wasser oder Hafersahne, um es abzumildern (3g Salz auf 100g, uff 😃). Und kennt ihr Pesto-Blumen? Das sind wunderschöne Blätterteigkonstrukte mit Pesto gefüllt. Creamy Chocolate Pistachio Tart 🌿 Long time no tart so I felt like doing a very fancy one with pistachios and avocado 🥑 It was super creamy and delicious 💕 Find the recipe below! Recipe

Ingredients
For the base
300 g flour
200 g vegan butter
100 g sugar
1 tbsp ice cold water
2 tbsp raw cacao powder

For the filling
200 g pistachios (shelled and soaked overnight)
150 ml maple syrup
4 tbsp coconut oil (solid)
1 can coconut milk (chilled, use only the white thick part from the top of the can) 
125g coconut yoghurt
1 avocado 
Berries as decoration

Method

Mix all ingredients for the base, best by hand and place  in the fridge for at least 30 min. Preheat oven to 180°C, roll out the dough and place in a tart tin. Bake for 15 - 20 min and let it cool down completely. 
Mix all ingredients for the filling in a food blender, pour over the base and place in the fridge for at least 5 hours, better overnight. Decorate with berries. .

Sweet and Spicy Udon Noodle Stir-Fry by @thefoodietakesflight 🧡

Good for 2-3 servings
_
400g (2 cakes) cooked udon noodles*
1 red bell pepper, sliced into strips
1 240g block extra firm tofu, drained and sliced into strips
½ large onion, sliced into strips
1 small carrot, sliced into strips
4 cups (200g) shredded cabbage
1 tbsp neutral oil
Sesame seeds, for garnishing
Chopped spring onions, for garnishing
*Note: Feel free to use other noodles if you’d like!

Sauce Ingredients
2 tbsp soy sauce or liquid aminos
1 ½ tsp sriracha, adjust according to desired spice
¼ cup room temp. water
3 tbsp coconut sugar
1 tsp sesame oil
½ tbsp cornstarch
_
1. Heat the oven to 350F. On a lined baking tray, bake the tofu until lightly golden for around 25 mins. You can opt to pan fry the tofu in some oil if you’d like.
2. Mix all the sauce ingredients together. Make sure the cornstarch is diluted.
3. Heat a pan. Add in 1 tbsp oil. Sauté the onions until tender. Add in the bell peppers, carrots, and cabbage. Sauté until cooked, around 10 minutes.
4. Add in the tofu and cooked noodles. Pour in the sauce mixture. Sauté for another 3-4 minutes until the noodles have absorbed the sauce. Turn off heat and then garnish with some sesame seeds and spring onions, if desired. Enjoy while hot!

🌱😍 Pesto Stuffed Gnocchi ! 📷 by @thevegansara 🚨🚨Recipe: about 1 1/2 lbs, 1 cup flour, 1 tsp olive oil, 1 tsp kosher salt, pepper, 1/2 cup vegan pesto
1️⃣In a large pot cover potatoes with cold water, bring to a boil, then simmer 30 min till fork tender, drain, peal skin off with fork while still warm 
2️⃣On work surface put potato through a ricer (preferred method) or mash, spread riced potato out, wait 5 min till less hot, then sprinkle with salt/pepper gently combine using hands or bench scraper. Give a taste, adjust till it taste good to you
3️⃣Next add flour a bit at a time ,drizzle in oil, gently working it into a dough. Fold the dough in overlapping layers to help combine 2-3 min.The dough should be soft. Let rest 15 min
4️⃣Cut ball into 4 equal pieces. On a floured surface, gently roll into a long rope about 1 in thick, then gently flatten till about 2in wide
4️⃣ Using piping bag with 1/4 in opening, or a plastic bag with bottom corner cut, pipe pesto across the length of rope in the middle leaving a boarder at top and bottom of dough
5️⃣ Seal the gnocchi by bringing the top of the dough to the bottom of dough, & pinch dough together the length of the rope, give it a nice roll back and forth to ensure seal 
6️⃣Then cut into 1 inch pieces. Place on parchment lined tray, repeat with remaining dough 
7️⃣ On stovetop, bring well salted pot of water & cook gnocchi in batches over a slow boil. The gnocchi will rise to the top in 2-3 min. Using a slotted spoon to drain water. 
8️⃣Next, using a nonstick pan cook gnocchi in batches using a pat of butter on medium. Cook 4-5 min on each side or until crisp. Season as desired. Serve with more pesto!! Enjoy

Wir haben einfach Sojagranulat 10 Minuten  in Gemüsebrühe einweichen lassen, das Ganze mit Zwiebeln, Möhren und Knoblauch angebraten. 2 Dosen stückige Tomaten, etwas Rotwein und ein paar Gewürze dazugegeben.
In einer Auflaufform abwechselnd Soße und Lasagneplatten schichten.
Vegane Creme Fraiche und den Reibekäse von @simplyvgenuss drauf und ca. 30 Minuten bei 200 Grad Ober-Unterhitze in den Ofen. 😋
